Roselli's Astrid series' UHC Beet knife is very suitable for peeling and slicing of root vegetables. Thanks to the durable UHC steel, the blade stays sharp for a long time and doesn't need sharpening very often. All the Astrid series' knives should be washed individually and dried carefully, avoiding the use of washing machines. The handle of the knife is made from heat treated birch, coated with linseed oil to ensure a firm grip even while wet. Beet knife comes with a birch knife rack coated with linseed oil.
